Ruthie Ashenhurst is a Dublin based artist. She studied at the College of Art and Design in Bristol, specialising in acrylic, pastels and etching. She has been teaching art for 15 years in addition to exhibiting her own work successfully.

Regarding the inspiration for her recipe, she says “My first taste of seafood was lobster in the Southern Lake Hotel, Waterville, Co. Kerry. I was about seven years old and it was a ‘special’ on the menu. I loved it and still do! The dish I am including is not lobster but a favourite salmon recipe given to me by my friend Jane.”
